Kristin Sedej, FCSI

Kristin brings a strong operational background to S2O Consultants by drawing on her extensive hospitality experience as well as her in-depth knowledge of all facets of the food design service industry. She holds a BS in Hospitality Management from Roosevelt University and currently is a Professional member of the Foodservice Consultants Society International. In 2014, FE&S magazine awarded Kristin the Consultant Top Achiever of the year award.

Kristin began her career in food service management. After gaining hands on experience in the industry, she joined Cini-Little International and quickly became known for her personal drive, ability to learn quickly and strong personal skills. She, along with fellow S2O partner Harry Schildkraut, left the company to form Schildkraut, Schroeder, Sedej & Associates in 2003. After that firm was dissolved in 2008, Kristin and Harry formed S2O Consultants and continue to provide a broad range of specialized consulting services to the Sports, Corporate, Educational and Hospitality industries in the area of food service. She is both a facilities designer and operational consultant.

As of 2022, the company has grown to a firm of 10 with Kristin is 81% owner of S2O Consultants, Inc.

Key projects have included renovations to the New Orleans Superdome, starting in 2005 after Hurricane Katrina up to the current renovations slated for completion in 2025, LAFC-new soccer stadium in Los Angeles, working on the renovations to the United Center, home of her favorites, the Chicago Bulls and the Blackhawks and multiple projects at Churchill Downs, Home of the Kentucky Derby.

Kristin resides in the city of Chicago and is enjoying being an empty nester. She enjoys dining out and traveling with friends and her 2 adult children.

Harry Schildkraut, FCSI

Harry is one of the most highly skilled and well-respected consultants in the food service design industry with more than 40 years experience. Throughout his successful career, Harry has received numerous awards including the Outstanding Consultant of the Year from MAFASI Region 17 in 2003, President’s Citation for Distinguished Service from FCSI, Spes Hominum Award from the National Sanitation Foundation, and the Young Lion of the Year from FES Magazine in 1988. He also holds a B.S. in Hotel Administration from Cornell University.

Harry entered into the food service industry in 1969 as a consultant for Cini-Little International. He became proficient in all aspects of the food service industry and rose to the position of Principal and Vice President. Harry left the organization in 2003 to establish Schildkraut, Schroeder, Sedej & Associates along with current partner, Kristin Sedej. After the firm dissolved in 2008, Harry and Kristin formed their current company, S2O Consultants, Inc.

Key projects have included the new Indianapolis Colts Lucas Oil Stadium – which was named the Sports Facility of the Year by Street and Smith’s Sports Business Journal, winning project of the month from FE&S Magazine for the new dining pavilion at Ravinia Festival, renovations to the New Orleans Superdome after Hurricane Katrina, receiving the LEED Gold certification for work done on the HSBC North America Headquarters, and working on designing food service facilities for the first LEED-certified green major professional sports stadium in the U.S. – the new Nationals Ballpark in D.C.

Known for his extensive business background, Harry has delivered lectures for a number of organizations including the International Association of Amusement Parks and Attractions, American Hotel and Motel Association, Harold Washington College, and DuPage County Community College. He is also a professional member of the Foodservice Consultants Society International, National Fire Protection Association, and the Cornell Hotel Society.

Harry has done extensive pro-bono work for the United Methodist Church in Barrington, Ronald McDonald House in Chicago and the Salvation Army Recreation Center. He also has served as Chair of the Architectural Review Commission for the Village of Hawthorn Woods, Illinois for the past 17 years. Harry enjoys a lifelong hobby of model railroading.

Ryan Rongo, FCSI

Project Manager Ryan, FCSI, LEED AP BD + C, will be involved in the project from start-to-finish, and will direct and coordinate project schedules, resources, and equipment. As well as maintenance of project documents, plans, and reports. Ryan will work closely with the other members of the team to coordinate all aspects of the foodservice equipment requirements and ensure the client’s needs are met as the project evolves.

Ryan Rongo began his career in the foodservice industry over 20 years ago as a project manager for a custom equipment fabricator and dealer before becoming a project manager with S2O Consultants.
As project manager, Ryan has worked on numerous large venue projects including professional and collegiate sports venues, hotels, K-12 schools, health care, corporate dining, and higher education facilities. Ryan is LEED AP BD+C accredited and is an FCSI Professional Member.

Ryan resides in the city of St. Charles with his wife and dog.

Peg Galie, FCSI

Project Manager Peg will be involved in the project from start-to-finish, and will direct and coordinate project schedules, resources, and equipment. As well as maintenance of project documents, plans, and reports. Peg will work closely with the other members of the team to coordinate all aspects of the foodservice equipment requirements and ensure the client’s needs are met as the project evolves.

Peg Galie began her career in the foodservice industry at the age of 14 as a dishwasher and continued to work in foodservice as a server, bartender, cook and front-end manager. She has also been involved in residential construction. That changed in 2008 during the great recession when she joined a health care company. During her time in the health care industry, she worked part-time for S2O reviewing plans and specifications. She joined S2O in 2014 and has worked her way up through prior to becoming a project manager with S2O Consultants.
As project manager, Peg has worked on numerous large venue projects including professional and collegiate sports venues, hotels, K-12 schools, health care, corporate dining, and higher education facilities. Peg is an FCSI Professional Member.

Peg resides in the city of McHenry with her dog. She loves to travel and spend time with her grandchildren and family.

Joe Mora, FCSI
Joe Mora, FCSIDesign Director of Florida Office: 813-505-1312
A versatile and experienced Foodservice Consultant, Joe Mora brings over 35 years of experience in the industry, 20 of those as a designer and project manager. With a well-developed foundation in design, Joe holds a BS in Architecture from the Ohio State University, as well as a wealth of operational expertise gained working with operators like ClubCorp, Restaurant Associates and Marriott. Joe brings a balance of sound design practices with an understanding of the operational issues of a project to create spaces that work efficiently.

Joe began his foodservice consulting career with Cini-Little and has worked with other firms managing projects in hospitality, healthcare, sports venues, and amusement and entertainment. Some of Joe’s notable projects have been Volcano Bay water park at Universal Orlando, the Arizona Cardinals Stadium, the Hard Rock Hotel and Casino in Atlantic City, and various restaurant projects in the US and Europe.

Joe serves his community as a volunteer with the Civil, Air Patrol, the auxiliary of the USAF. He is a Group Commander, overseeing the operations of fourteen squadrons and holds the rank of Major. He lives in Tampa, Florida.

Amber Kennedy

Project Coordinator & Revit/CAD Technician Amber brings over 20 years’ experience in the foodservice industry to S2O Consultants. Amber will be the project coordinator for the project and will direct and coordinate project schedules, resources, and equipment. She will oversee the daily management of projects, including designing foodservice equipment floor and site plans and preparing utility requirement plans while utilizing the latest Auto Cad and Revit software. Amber is also responsible for coordinating project documentation, equipment specifications and ensuring code and health department compliance. She will use the latest software to create design plans to meet the needs of the clients in all aspects of the foodservices for the facility.

Amber’s expertise in AutoCAD and Revit drawing production, BIM creation, MEP, Architectural Coordination, and onsite surveying makes her a vital member of the S2O team.

Amber Kennedy began her career in the foodservice industry at age 16 working as a cook/cashier for McDonald’s, a server at an Oyster Shucking Bar and a line cook at multiple family restaurants; all in the Kissimmee, Florida area. She joined S2O
in 2012 and has worked her way up to Senior Project Coordinator/Revit Technician with S2O Consultants. Amber resides in the city of McHenry, IL with her husband and son.
